maine lobster with ricotta dumplings, black sesame, and nasturtium

FIFTH
pork collar with preserved summer peppers, fennel, and umeboshi

Or halibut with littleneck clam sauce, trout roe, lovage, and sea fennel

Or cabbage with black salsify, comte, and black truffle beurre blanc

DESSERT
chocolate cake with whipped molasses caramel, pomelo, and sea salt
